Gas Interlock Systems

To comply with gas safety standard BS 6173, all new kitchen installations must have a gas / ventilation interlock installed. The interlock simply shuts off the gas system when no air flow is detected through the ventilation system.

Grease & Odour Control

Cooking fumes contain grease, carbon and water vapour, released during the cooking process. These fumes must be removed from the kitchen area, and discharged to a suitable external termination...

The build up of grease within a kitchen extraction system is a high risk fire hazard, that has caused fires in many restaurants worldwide.

Unfortunately, it is a common mistake of commercial property owners to ignore cleaning of the canopies and duct-work as part of regular maintenance.

A correctly installed extraction system must have the ability to capture at least part of the grease and condensate removed from the cooking process. Below are a few popular types of filtration installed and a brief description...

Mesh type filters... These are usually installed within the kitchen canopy directly above the kitchen cooking range. They offer a limited amount of grease separation and can be difficult to clean. These filters are not common in new installations.

 

Baffle type filters... Usually installed as first line of defence against grease within the kitchen canopy. They offer a reasonable amount of grease separation and can be easily cleaned, these are the most common form of simple filtration.

 

Carbon filtration... Are installed in separate ducting plenum boxes and will offer grease and odour control. However these filters are very expensive and require regular replacement.

  

Ultra violet filtration... UV filters are very successful in the breakdown of grease and odours. The UV filter can be retrofitted into existing systems. They work by injecting ozone formed by UV lamps, which in turn breaks down the grease and odours into water vapour. These systems are expensive to install but compared to carbon filtration are much cheaper to maintain with only the UV lamps requiring annual replacement.

For any kitchen ventilation system to achieve the desired air flows, a suitable extraction and supply system must be installed. Kitchen extraction systems must be designed to cope with the type and amount of cooking taking place. Design of the kitchen capture hood and associated ventilation system are critical to the system operation.

Extraction systems range from simple through wall systems, to more complex long distance ducted systems. Design of the kitchen extraction termination, needs careful consideration to comply with building regulations and environmental issues...

Supply air systems are essential to obtain an air flow through the kitchen extraction system. A supply air system must provide up to 85% of the extraction air volume. Systems can be installed with filtration, heating and heat recovery depending upon the area served.

 All systems are installed to HVCA standard DW/172.

Our systems can be fully speed controllable, with electronic control. Fire suppression systems can be arranged via specialist contractors.

Extraction Hoods
Extraction Hoods

Kitchen extraction hoods are available in several different configurations. The kitchen hood is usually installed over the source of fumes and odours, to capture the contaminants. A standard hood is constructed from stainless steel to provide a smart hygienic surface.

Kitchen hoods are designed to suit the cooking range, and type of cooking that will take place within the area. The hood must be installed with a first line of grease and moisture elimination / capture...

Stainless Steel Finishes

Hoods are manufactured in two basic types of stainless steel depending on the customers requirements...

Brushed stainless steel finish (304 grade). A dull, grained high quality stainless steel finish

Mirror stainless steel finish (430b grade). A high mirror (similar to chrome) stainless steel finish

All kitchen hoods are manufactured and installed following HVCA standard DW/172. Hoods can be manufactured from other materials if required.

Basic Filtration

Filtration within extraction canopies usually comprises of mesh or baffle filters installed  within the hood itself. These filters are only a basic form of filtration and usually consist of a removable / cleanable cartridge. For more details select "GREASE & ODOUR CONTROL" from the Kitchen Ventilation menu.

Wall Linings

The installation of wall or infill linings to provide a matching hygienic surface is regularly undertaken when installing kitchen hoods. The main materials used are the two types of stainless steels listed above.
